Flavorful Avocado, Tomato, and Mushroom Toast with Gluten-Free Bread
Ingredients
- 2 slices of Kim and Jake's Gluten-Free Herb Loaf
- One avocado
- 1/2 cup mushrooms
- 1 cup cherry tomatoes
- 1 clove garlic
- Juice of 1/4 lemon
- Olive oil
- Balsamic vinegar
- Salt and pepper to taste
Preparation
In a pan, add some olive oil, balsamic vinegar, 1/2 clove of minced garlic, mushrooms, and salt and pepper. Sauté the mushrooms for 5-7 minutes, stirring occasionally.
Slice the cherry tomatoes and toss them in a bowl with some olive oil, balsamic vinegar, the other 1/2 clove of minced garlic, and salt and pepper.
Add the tomatoes to a baking sheet and roast them in the oven for 15 minutes at 450°F.
Slice the avocado and mash it up. Add lemon juice, salt, and pepper.
To assemble the toast, slice your bread, add the avocado mash, and top with the sautéed mushrooms and roasted cherry tomatoes.
