Quick and Healthy Avocado Arugula Salad

Ingredients

  • 2 handfuls arugula
  • 1 handful black olives
  • 1/2 handful pumpkin seeds
  • 5 cherry tomatoes
  • 1/2-1 avocado
  • 1/4 can artichokes
  • 2 mushrooms

For the dressing

  • 2 tablespoons olive oil
  • 1 tablespoon balsamic vinegar
  • 1/2 teaspoon mustard
  • Salt and pepper to taste
  • Splash of lemon

Preparation

  1. Chop the olives, artichokes, and tomatoes in half.

  2. Slice up the avocado and mushrooms.

  3. Mix all the dressing ingredients together.

  4. Mix all the salad ingredients together.

  5. Drizzle the dressing over the salad just before serving.
