Three Ingredient Vegan Pancakes
Ingredients
- 1 ripe banana
- 200 g oats
- 375 ml plant milk
- cinnamon (optional)
Optional additions
- vegan protein powder
- cacao powder
- gingerbread spice
- dates
- 1 tablespoon apple cider vinegar
Suggested toppings
- peanut butter
- applesauce
- fresh strawberries
- dried dates
- vegan chocolate sauce
- frozen berries
- maple syrup
- soy yogurt
- coconut yogurt
Preparation
Mash the banana in a bowl to create a smooth mixture
Add oats, plant milk, and optional cinnamon to the mashed banana, then mix well to form a batter
Incorporate any optional additions like vegan protein, cacao, gingerbread spice, dates, or apple cider vinegar into the batter if desired
Heat a non-stick pan or griddle over medium heat and lightly grease it with oil or cooking spray
Pour portions of the batter onto the pan to form pancakes and cook until bubbles appear on the surface and the edges set, about 2-3 minutes
Flip the pancakes and cook the other side until golden brown, about 1-2 minutes more
Remove from heat and serve with desired toppings
