Garlicky Mushroom and Avocado Toast

Ingredients

  • sourdough bread, 2 slices
  • mushrooms (such as brown), a large handful
  • olive oil, 1 tablespoon
  • garlic, 1 clove
  • avocado, 1
  • lemon juice, 1 squeeze
  • fresh basil, small handful
  • salt and pepper, to taste

Preparation

  1. Slice the mushrooms to your preferred thickness and gently fry in olive oil over medium heat until golden brown

  2. Toast the bread

  3. Mash the avocado in a bowl and mix in the lemon juice

  4. Add the chopped garlic to the pan about one minute before the mushrooms are done

  5. Season the mushrooms with salt and pepper

  6. Spread the avocado mash on the toast and top with the mushrooms and fresh basil

Tips

  1. Brown mushrooms work well, but any variety can be used
