Mexican Street Corn Salad

Ingredients

  • 2 cups corn (frozen or fresh)
  • 1 tsp smoked paprika
  • 1/2 red or orange pepper, diced
  • 1/2 jalapeño, diced (or more)
  • 1/4 cup red onion
  • 1/4 cup green onion
  • 1/4 cup cilantro
  • Juice of 1 lime
  • 1/2 avocado
  • 1 tbsp mayo
  • 1 tbsp Greek yogurt
  • 1/4 cup crumbled feta
  • Sprinkle of cayenne (optional)

Preparation

  1. Sauté corn in 2 tablespoons of olive oil with smoked paprika, salt, and pepper until it becomes a little crispy, about 5-8 minutes.

  2. Chop all veggies and combine in a bowl with the remaining ingredients except for feta.

  3. Add the corn and mix well.

  4. Sprinkle feta on top, taste and adjust as needed, for example, add more salt, lime juice, or spice.

Tips

  1. This salad can be served as a side salad, a dip with chips, or layered on tacos.

  2. The recipe serves about 2 people; feel free to double it for more servings.
