Cilantro Lime Rice Bowls

Ingredients

  • 1 cup uncooked rice or 3 cups cooked rice
  • 1/2 cup chopped cilantro
  • 1 lime
  • 1 tsp lime zest

Toppings

  • 1 avocado
  • 1 garlic clove
  • 1 cup Pico de Gallo
  • 1 cup corn
  • 1 jalapeño
  • 1 green onion bulb
  • 1 tsp Tajin seasoning
  • Shredded cheddar (optional)

Preparation

  1. Cook the rice or skip this step if using cooked rice.

  2. Add cilantro, lime juice, lime zest, and drizzle with olive oil; let it crisp up for a few minutes.

  3. Grill the corn until nice and charred.

  4. Mash the avocado with lime juice and minced garlic.

  5. Dice the veggies such as jalapeño and green onion.

  6. Assemble the bowls with the rice, corn, guacamole, pico de gallo, jalapeño, and green onion.

  7. Sprinkle with Tajin seasoning.

Notes

  1. Option to add shredded cheddar.
