Cilantro Lime Nourish Bowl

Ingredients

  • 1 package palmini official rice
  • 1-2 tbsp vegan butter or oil of choice
  • 1 lime, juiced
  • 1/2 cup cilantro, chopped
  • salt, to taste
  • 160g leftover pulled tofu
  • 1/2 cup pico de gallo or other fresh salsa
  • 4 tbsp chipotle beans

Garnishes

  • 1 lime, sliced
  • cilantro
  • corn tortilla chips

Preparation

  1. In a frying pan, heat vegan butter over medium heat. Add rinsed and drained palmini official rice. Cook until heated through. Add lime juice, cilantro and salt. Stir.

  2. Reheat the tofu in the same pan as the rice.

  3. Divide rice and tofu between 2 bowls. Add pico de gallo, chipotle beans, lime wedges and tortilla chips. Sprinkle with cilantro and enjoy.
