Tofu Beet Buddha Bowl
Ingredients
- 1 bunch lacinato kale, finely chopped
- 1 lemon, juiced
- 1 tsp cold pressed olive oil
- Pinch of salt and pepper
- 2 cups beets, steamed and cooled
- 1 avocado, sliced
- 8 oz extra firm tofu, cubed
- 2 tbsp pickled onions
- 2 tbsp balsamic vinegar
- 2 tbsp golden flaxseeds
- 1 tsp everything bagel seasoning
Preparation
Add kale to a bowl and drizzle with lemon juice, olive oil, salt and pepper. Use your hands to massage for 15 seconds until tender. Divide between two serving bowls.
Top with remaining ingredients and enjoy!
Tips
Choose a base of greens such as massaged kale, spinach, arugula, romaine or red lettuce.
Add optional grains like rice, quinoa, millet, or buckwheat.
Add a plant protein including lentils, beans, edamame, tofu (raw or cooked), or tempeh.
Add some healthy fats with nuts, seeds, avocado, or coconut yogurt.
Add some low-cal volume with fresh, roasted, steamed, or pickled veggies.
Add some sweetness with fresh or dried fruit.
Add some flavor with a squeeze of lemon or lime, rice vinegar, balsamic vinegar, sriracha, tahini, peanut sauce, hoisin sauce, or gochujang sauce.
