Roasted Beet and Walnut Salad
Ingredients
- A couple handfuls of spinach
- 4-6 beets
- 1/3 cup chopped walnuts
- 1/3 cup feta
Dressing
- 3 tbsp olive oil
- 1 tbsp balsamic vinegar
- 1 tsp maple syrup
- 1 tsp Dijon
- Salt and pepper
Preparation
Preheat the oven to 350 degrees.
Place the beets on a large baking sheet lined with parchment paper.
Rub the beets with oil and bake for 50 minutes.
Let the beets cool, then peel and cube them.
Combine the beets with spinach, crushed walnuts, and crumbled feta.
Whisk together the dressing ingredients and toss with the salad.
