Shredded Kale and Brussels Sprouts Salad

Ingredients

  • 1 small bunch of kale
  • 3 handfuls of Brussels sprouts
  • 1/4 cup olive oil
  • 2 tablespoons honey
  • 2 tablespoons apple cider vinegar
  • 2 tablespoons Dijon mustard
  • 2 teaspoons mayonnaise (optional)
  • Salt and pepper to taste
  • 1/3 cup crumbled feta cheese
  • 1/3 cup chopped pecans

Preparation

  1. Trim, wash, and finely chop the kale.

  2. Add a drizzle of oil and massage the kale for 5 minutes.

  3. Trim, wash, and cut the Brussels sprouts lengthwise in half, then finely slice and add to the kale.

  4. Whisk together the dressing ingredients and toss with the vegetables.

  5. If desired, let the salad marinate for 30 minutes or overnight.

  6. Top with nuts and cheese, and optionally add a sprinkle of chili flakes.
