Brussels Sprout Salad with Bacon, Pecans, Apples, and Cranberries
Ingredients
- 1 lb shaved Brussels sprouts
- 1 cup chopped kale
- 1 tbsp olive oil
- 1/4 cup cranberries
- 1/4 cup chopped pecans
- 1 red apple chopped
- 1/3 cup cooked bacon (crumbled)
- 1 cup sharp cheddar (shaved)
Dressing
- 4 tbsp olive oil
- 2 tbsp apple cider vinegar
- 1 tbsp dijon mustard
- 1 tbsp honey
- 1/2 tsp garlic powder
- Salt and pepper to taste
Preparation
Massage the kale and Brussels sprouts with 1 tbsp olive oil
Add the bacon, cheese, pecans, cranberries, and apple
Mix together with a spatula
In a small bowl, whisk the dressing ingredients
Add the dressing when you’re ready to serve
Tips
Add the dressing just before serving to keep the salad fresh and prevent sogginess
