Brussels Sprout Salad with Bacon, Pecans, Apples, and Cranberries

Ingredients

  • 1 lb shaved Brussels sprouts
  • 1 cup chopped kale
  • 1 tbsp olive oil
  • 1/4 cup cranberries
  • 1/4 cup chopped pecans
  • 1 red apple chopped
  • 1/3 cup cooked bacon (crumbled)
  • 1 cup sharp cheddar (shaved)

Dressing

  • 4 tbsp olive oil
  • 2 tbsp apple cider vinegar
  • 1 tbsp dijon mustard
  • 1 tbsp honey
  • 1/2 tsp garlic powder
  • Salt and pepper to taste

Preparation

  1. Massage the kale and Brussels sprouts with 1 tbsp olive oil

  2. Add the bacon, cheese, pecans, cranberries, and apple

  3. Mix together with a spatula

  4. In a small bowl, whisk the dressing ingredients

  5. Add the dressing when you’re ready to serve

Tips

  1. Add the dressing just before serving to keep the salad fresh and prevent sogginess
