Honey Mustard Chicken Salad

Ingredients

  • 3 chicken breasts
  • 1/4 cup honey
  • 1/4 cup mayo
  • 2 tbsp Dijon mustard
  • 1/2 tsp garlic powder
  • Salt and pepper

Optional additions

  • Bacon
  • Avocado
  • Tomatoes

Preparation

  1. Mix honey, mayo, mustard, garlic powder, salt and pepper together in a bowl

  2. Spread about one-third of the mixture on the chicken breasts

  3. Let it marinate for 1 hour, or skip if desired

  4. Bake the chicken at 400 degrees Fahrenheit for 30 minutes

  5. Cut the cooked chicken into pieces

  6. Use the remaining sauce as a dressing

  7. Assemble the salad by combining the chicken, bacon, avocado, tomatoes, and dressing

Tips

  1. The same sauce is used for both marinating and dressing, which saves time and reduces dishwashing

  2. This recipe can be made paleo-friendly by using a paleo-compliant mayonnaise
