Shrimp Cobb Salads with Avocado Dressing
Ingredients
- 1 lb raw large shrimp
- 2 tsp paprika
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp oregano
- Sprinkle of cayenne
- Sprinkle of salt & pepper
- 1 ripe avocado
- Juice of 1 lemon
- 3/4 cup avocado oil (or olive oil)
- 2 tbsp apple cider vinegar
- Salt and pepper to taste
- Bacon
- Corn
- Avocado
- Tomatoes
Preparation
Peel the shrimp.
Add the peeled shrimp to a bowl and mix in the paprika, garlic powder, onion powder, oregano, cayenne, salt, and pepper. Let the shrimp marinate for 10-15 minutes.
While the shrimp is marinating, bake the bacon in an oven preheated to 400°F (200°C) for about 15 minutes, or until crispy.
Once the shrimp has marinated, heat a pan over medium heat with a little olive oil. Add the marinated shrimp and cook for 4-5 minutes, or until the shrimp are cooked through.
While the shrimp is cooking, prepare the avocado dressing. In a food processor, combine the ripe avocado, lemon juice, avocado oil (or olive oil), apple cider vinegar, salt, and pepper. Blend until smooth and creamy.
Assemble the salads by layering the cooked shrimp, crispy bacon, corn, avocado, and tomatoes.
Drizzle the avocado dressing over the salads.
