Easy Roasted Veggie and Salmon Salad
Ingredients
- spinach
- potatoes
- beets
- asparagus
- cherry tomatoes
- feta cheese
- salmon
Dressing
- lemon juice
- olive oil
- Dijon mustard
- honey
- salt and pepper
Preparation
Preheat the oven and roast the potatoes, beets, asparagus, and salmon until cooked and slightly browned
In a small bowl, mix the dressing ingredients until well combined
Arrange spinach on a plate or bowl as the base
Add the roasted vegetables, cherry tomatoes, feta cheese, and salmon on top of the spinach
Drizzle the dressing over the salad and serve immediately
Tips
Feta cheese can be fresh or substituted with other cheeses
