Chopped Peach Chickpea Salad

Ingredients

  • 1 can of chickpeas
  • 2 peaches
  • Mixed greens or lettuce
  • 1 cup diced cherry tomatoes
  • 1 cup diced cucumber
  • 1/2 cup corn
  • 1/4 cup diced red onion
  • 1/4 cup crumbled feta
  • 1/4 cup sliced almonds
  • Handful of torn basil leaves

Dressing

  • 1/3 cup olive oil
  • Juice of 1 lemon
  • 2 tsp Dijon
  • 2 tsp maple syrup
  • Salt and pepper to taste

Preparation

  1. Wash and chop the veggies

  2. Rinse and drain the chickpeas

  3. Whisk together the dressing

  4. Assemble the bowls
