Easy Pasta Salad with Vegetables

Ingredients

  • 12 ounce chickpea pasta
  • 1 diced avocado
  • 1 cup fresh mozzarella
  • 1/3 cup sliced tomatoes
  • 1/3 cup sliced cucumber
  • 1/4 cup diced red onion
  • 1/4 cup olive oil
  • 1 tsp garlic
  • 1 tsp Italian seasoning
  • Salt and pepper to taste

Preparation

  1. Cook the pasta according to the package instructions.

  2. Add in all the veggies.

  3. Add olive oil and the spices.

  4. Mix with a spatula.

  5. Serve.
