Easy Pasta Salad with Vegetables
Ingredients
- 12 ounce chickpea pasta
- 1 diced avocado
- 1 cup fresh mozzarella
- 1/3 cup sliced tomatoes
- 1/3 cup sliced cucumber
- 1/4 cup diced red onion
- 1/4 cup olive oil
- 1 tsp garlic
- 1 tsp Italian seasoning
- Salt and pepper to taste
Preparation
Cook the pasta according to the package instructions.
Add in all the veggies.
Add olive oil and the spices.
Mix with a spatula.
Serve.
