Oyster Mushroom and Avocado Toast

Ingredients

Guacamole

  • 1 avocado
  • 100g chickpeas
  • 1 tsp cumin
  • 1/2 tsp chili powder
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1 tsp olive oil
  • Lemon juice
  • 1-2 tbsp water

Oyster mushroom topping

  • 1 tbsp olive oil
  • 3g fresh chili
  • 1 garlic clove
  • Fresh basil
  • 100g oyster mushroom

Bread

  • Sourdough bread

Preparation

  1. Mix all guacamole ingredients in a high-speed blender.

  2. Heat 1 tablespoon olive oil in a pan and fry the fresh chili, garlic, and fresh basil.

  3. Add the oyster mushroom to the pan and fry until golden.

  4. Serve the guacamole and fried oyster mushrooms on sourdough bread.
