Vegan Cheesy Pesto Avocado Toast

Ingredients

  • Slices of bread
  • Vegan cheese
  • Ripe avocado
  • Sauerkraut or dill pickle (optional)

Pesto

  • 2 tablespoons cashews
  • A handful of basil leaves
  • A handful of chopped kale
  • 1 crushed garlic clove
  • 2 tablespoons nutritional yeast
  • Juice of 1/2 lemon
  • Salt and pepper to taste
  • A glug of olive oil

Preparation

  1. Add the pesto ingredients to a food processor and blitz until creamy.

  2. Spread a thick layer of pesto on each slice of bread.

  3. Add vegan cheese, avocado slices, and sauerkraut or pickle to the bread slices.

  4. Toast the sandwich in a griddle pan until crispy and golden brown around the edges.

Tips

  1. If you don't like sauerkraut, swap it for pickle.
