Vegan Cheesy Pesto Avocado Toast
Ingredients
- Slices of bread
- Vegan cheese
- Ripe avocado
- Sauerkraut or dill pickle (optional)
Pesto
- 2 tablespoons cashews
- A handful of basil leaves
- A handful of chopped kale
- 1 crushed garlic clove
- 2 tablespoons nutritional yeast
- Juice of 1/2 lemon
- Salt and pepper to taste
- A glug of olive oil
Preparation
Add the pesto ingredients to a food processor and blitz until creamy.
Spread a thick layer of pesto on each slice of bread.
Add vegan cheese, avocado slices, and sauerkraut or pickle to the bread slices.
Toast the sandwich in a griddle pan until crispy and golden brown around the edges.
Tips
If you don't like sauerkraut, swap it for pickle.
