Avocado Garlicky Mushroom Toast
Ingredients
- 2 slices of bread of your choice, we recommend crunchy sourdough
Mushrooms
- 250-300g chestnut mushrooms
- 1 crushed garlic clove
- 1 tablespoon olive oil
- generous splash of tamari sauce
- 2 tablespoons thyme leaves
- sprinkle of black pepper
Avocado
- 1 ripe avocado
- juice of 1/2 lemon
- pinch of sea salt or pink Himalayan salt
Preparation
Wash the mushrooms and slice them.
Heat the olive oil in a frying pan.
Add the crushed garlic and cook for 1 minute, stirring occasionally to prevent burning.
Add the sliced mushrooms and tamari sauce, and cook for 8-10 minutes until all the water from the mushrooms has evaporated.
Add the fresh thyme and black pepper.
Mash the avocado with a fork and add the lemon juice and salt.
Toast the bread.
Spread a thick layer of the avocado on the toasted bread and top with the mushrooms.
