Avocado Garlicky Mushroom Toast

Ingredients

  • 2 slices of bread of your choice, we recommend crunchy sourdough

Mushrooms

  • 250-300g chestnut mushrooms
  • 1 crushed garlic clove
  • 1 tablespoon olive oil
  • generous splash of tamari sauce
  • 2 tablespoons thyme leaves
  • sprinkle of black pepper

Avocado

  • 1 ripe avocado
  • juice of 1/2 lemon
  • pinch of sea salt or pink Himalayan salt

Preparation

  1. Wash the mushrooms and slice them.

  2. Heat the olive oil in a frying pan.

  3. Add the crushed garlic and cook for 1 minute, stirring occasionally to prevent burning.

  4. Add the sliced mushrooms and tamari sauce, and cook for 8-10 minutes until all the water from the mushrooms has evaporated.

  5. Add the fresh thyme and black pepper.

  6. Mash the avocado with a fork and add the lemon juice and salt.

  7. Toast the bread.

  8. Spread a thick layer of the avocado on the toasted bread and top with the mushrooms.

  9. Enjoy!
