Avocado Garlicky Mushroom Toast
Ingredients
Mushrooms
- About 250/300g chestnut mushrooms
- 1 clove garlic, crushed
- 1 tablespoon olive oil
- a generous splash of tamari sauce
- 2 tablespoons thyme leaves
- a sprinkle of black pepper
Avocado
- 1 ripe avocado
- juice of 1/2 lemon
- a pinch of sea salt or pink Himalayan salt
Bread
- 2 slices of bread of your choice, we recommend crunchy sourdough
Preparation
Wash and slice the mushrooms.
Heat the olive oil in a frying pan.
Add the crushed garlic and cook for 1 minute, stirring to prevent burning.
Add the sliced mushrooms and tamari sauce, then cook for 8-10 minutes until the water from the mushrooms has evaporated.
Add the fresh thyme and black pepper.
Mash the avocado with a fork, then add the lemon juice and salt.
Toast the bread, spread a thick layer of the avocado on top, and add the mushrooms.
Notes
This recipe makes 2 large slices of toast.
Crunchy sourdough bread is recommended for best results.
