Avocado Garlicky Mushroom Toast

Ingredients

Mushrooms

  • About 250/300g chestnut mushrooms
  • 1 clove garlic, crushed
  • 1 tablespoon olive oil
  • a generous splash of tamari sauce
  • 2 tablespoons thyme leaves
  • a sprinkle of black pepper

Avocado

  • 1 ripe avocado
  • juice of 1/2 lemon
  • a pinch of sea salt or pink Himalayan salt

Bread

  • 2 slices of bread of your choice, we recommend crunchy sourdough

Preparation

  1. Wash and slice the mushrooms.

  2. Heat the olive oil in a frying pan.

  3. Add the crushed garlic and cook for 1 minute, stirring to prevent burning.

  4. Add the sliced mushrooms and tamari sauce, then cook for 8-10 minutes until the water from the mushrooms has evaporated.

  5. Add the fresh thyme and black pepper.

  6. Mash the avocado with a fork, then add the lemon juice and salt.

  7. Toast the bread, spread a thick layer of the avocado on top, and add the mushrooms.

Notes

  1. This recipe makes 2 large slices of toast.

  2. Crunchy sourdough bread is recommended for best results.
