Garlicky Mushroom and Avocado Toast
Ingredients
Mushrooms
- About 250-300g chestnut mushrooms
- 1 clove garlic
- 1 tablespoon olive oil
- A generous splash of tamari sauce
- 2 tablespoons thyme leaves
- A sprinkle of black pepper
Avocado
- 1 ripe avocado
- Juice of 1/2 lemon
- A pinch of sea salt or pink Himalayan salt
Bread
- 2 slices of bread of your choice
Preparation
Wash and slice the mushrooms.
Heat olive oil in a frying pan.
Add crushed garlic and cook for 1 minute, stirring to prevent burning.
Add sliced mushrooms and tamari sauce, and cook for about 8-10 minutes until all the water from the mushrooms has evaporated.
Add fresh thyme and black pepper.
Mash the avocado with a fork and add lemon juice and salt.
Toast the bread.
Spread a thick layer of avocado on the toast and top with mushrooms.
