Avocado Garlicky Mushroom Toast

Ingredients

Mushrooms

  • About 250/300gr of chestnut mushrooms
  • 1 clove of garlic -crushed
  • 1 tablespoon of olive oil
  • a generous splash of tamari sauce
  • 2 tablespoons of thyme leaves
  • a sprinkle of black pepper

Avocado

  • 1 ripe avocado
  • the juice of 1/2 lemon
  • a pinch of sea salt or pink Himalayan salt

Preparation

  1. Heat olive oil in a pan over medium heat, add crushed garlic, and sauté for 1 minute

  2. Add mushrooms, tamari sauce, thyme leaves, and black pepper; cook until mushrooms are tender, about 5-7 minutes

  3. In a bowl, mash the avocado with lemon juice and salt

  4. Toast the bread slices until golden brown

  5. Spread the mashed avocado on the toasted bread and top with the cooked mushroom mixture
