Garlicky Mushroom Avocado Toast

Ingredients

Mushrooms

  • 250-300g chestnut mushrooms
  • 1 garlic clove
  • 1 tablespoon olive oil
  • Splash of tamari sauce
  • 2 tablespoons thyme leaves
  • Sprinkle of black pepper

Avocado

  • 1 ripe avocado
  • Juice of 1/2 lemon
  • Pinch of sea salt

Bread

  • 2 slices bread

Preparation

  1. Wash and slice the mushrooms.

  2. Heat olive oil in a frying pan.

  3. Add crushed garlic and cook for 1 minute, stirring occasionally to prevent burning.

  4. Add sliced mushrooms and tamari sauce, and cook for 8-10 minutes until all the water from the mushrooms has evaporated.

  5. Add thyme leaves and black pepper.

  6. Mash the avocado with a fork and mix in lemon juice and salt.

  7. Toast the bread slices.

  8. Spread a thick layer of the avocado mixture on the toast and top with the mushrooms.
