Garlicky Mushroom Avocado Toast
Ingredients
Mushrooms
- 250-300g chestnut mushrooms
- 1 garlic clove
- 1 tablespoon olive oil
- Splash of tamari sauce
- 2 tablespoons thyme leaves
- Sprinkle of black pepper
Avocado
- 1 ripe avocado
- Juice of 1/2 lemon
- Pinch of sea salt
Bread
- 2 slices bread
Preparation
Wash and slice the mushrooms.
Heat olive oil in a frying pan.
Add crushed garlic and cook for 1 minute, stirring occasionally to prevent burning.
Add sliced mushrooms and tamari sauce, and cook for 8-10 minutes until all the water from the mushrooms has evaporated.
Add thyme leaves and black pepper.
Mash the avocado with a fork and mix in lemon juice and salt.
Toast the bread slices.
Spread a thick layer of the avocado mixture on the toast and top with the mushrooms.
