Vegan Garlicky Mushroom Avocado Toast

Ingredients

Mushrooms

  • 250-300 g chestnut mushrooms
  • 1 clove garlic
  • 1 tablespoon olive oil
  • Generous splash tamari sauce
  • 2 tablespoons fresh thyme leaves
  • Black pepper to taste

Avocado mash

  • 1 ripe avocado
  • Juice of 1/2 lemon
  • Pinch sea salt

Bread

  • 2 slices sourdough bread

Preparation

Mushrooms

  1. Wash and slice the mushrooms

  2. Heat olive oil in a frying pan over medium heat

  3. Crush the garlic clove

  4. Add crushed garlic and cook for 1 minute stirring occasionally to prevent burning

  5. Add sliced mushrooms and tamari sauce cook for 8-10 minutes until liquid has evaporated

  6. Stir in fresh thyme and black pepper

Avocado

  1. Mash the avocado with a fork

  2. Mix in lemon juice and salt

Assembly

  1. Toast the bread until golden

  2. Spread a thick layer of avocado mash on the toast

  3. Top with the cooked mushrooms

  4. Serve immediately
