Vegan Garlicky Mushroom Avocado Toast
Ingredients
Mushrooms
- 250-300 g chestnut mushrooms
- 1 clove garlic
- 1 tablespoon olive oil
- Generous splash tamari sauce
- 2 tablespoons fresh thyme leaves
- Black pepper to taste
Avocado mash
- 1 ripe avocado
- Juice of 1/2 lemon
- Pinch sea salt
Bread
- 2 slices sourdough bread
Preparation
Mushrooms
Wash and slice the mushrooms
Heat olive oil in a frying pan over medium heat
Crush the garlic clove
Add crushed garlic and cook for 1 minute stirring occasionally to prevent burning
Add sliced mushrooms and tamari sauce cook for 8-10 minutes until liquid has evaporated
Stir in fresh thyme and black pepper
Avocado
Mash the avocado with a fork
Mix in lemon juice and salt
Assembly
Toast the bread until golden
Spread a thick layer of avocado mash on the toast
Top with the cooked mushrooms
Serve immediately
