Avocado Toast with Garlicky Mushrooms
Ingredients
Mushroom topping
- 250-300g chestnut mushrooms
- 1 clove garlic
- 1 tablespoon olive oil
- Generous splash tamari sauce
- 2 tablespoons fresh thyme leaves
- Black pepper to taste
Avocado spread
- 1 ripe avocado
- Juice of 1/2 lemon
- Pinch sea salt or pink Himalayan salt
Bread
- 2 slices sourdough bread (recommended) or bread of choice
Preparation
Mushroom topping
Wash and slice the mushrooms
Heat the olive oil in a frying pan
Add the crushed garlic and cook for 1 minute stirring occasionally to prevent burning
Add the sliced mushrooms and tamari sauce and cook for 8-10 minutes until the liquid has evaporated
Add the fresh thyme and black pepper
Avocado spread
Mash the avocado with a fork and add the lemon juice and salt
Assembly
Toast the bread
Spread a thick layer of avocado on the toast and top with the mushrooms
