Avocado Toast with Garlicky Mushrooms

Ingredients

Mushroom mixture

  • 250-300g chestnut mushrooms
  • 1 clove garlic, crushed
  • 1 tablespoon olive oil
  • Generous splash tamari sauce
  • 2 tablespoons fresh thyme leaves
  • Black pepper, to taste

Avocado spread

  • 1 ripe avocado
  • Juice of 1/2 lemon
  • Pinch sea salt or pink Himalayan salt

Bread

  • 2 slices sourdough bread (or bread of choice)

Preparation

  1. Wash and slice the mushrooms

  2. Heat the olive oil in a frying pan

  3. Add the crushed garlic and cook for 1 minute, stirring occasionally to prevent burning

  4. Add the sliced mushrooms and tamari sauce, then cook for 8-10 minutes until the mushroom liquid has evaporated

  5. Add the fresh thyme and black pepper

  6. Mash the avocado with a fork and mix in the lemon juice and salt

  7. Toast the bread

  8. Spread a thick layer of the avocado on the toast and top with the mushrooms
