Vegan Cheesy Pesto Avocado Toastie
Ingredients
Pesto
- 2 tablespoons cashews
- Handful of basil leaves
- Handful of chopped kale
- 1 crushed garlic clove
- 2 tablespoons nutritional yeast
- Juice of 1/2 lemon
- Salt and pepper to taste
- Glug of olive oil
Toastie
- Bread slices
- Vegan cheese
- Avocado
- Sauerkraut or pickles
Preparation
Add the pesto ingredients to a food processor and blitz until creamy.
Spread a thick layer of pesto on each bread slice.
Add cheese, avocado slices, and sauerkraut or pickles to the slices.
Assemble the sandwich and toast in a griddle pan until crispy and golden brown around the edges.
Tips
If you don't like sauerkraut, swap it for pickles.
