Vegan Cheesy Pesto Avocado Toastie

Ingredients

Pesto

  • 2 tablespoons cashews
  • Handful of basil leaves
  • Handful of chopped kale
  • 1 crushed garlic clove
  • 2 tablespoons nutritional yeast
  • Juice of 1/2 lemon
  • Salt and pepper to taste
  • Glug of olive oil

Toastie

  • Bread slices
  • Vegan cheese
  • Avocado
  • Sauerkraut or pickles

Preparation

  1. Add the pesto ingredients to a food processor and blitz until creamy.

  2. Spread a thick layer of pesto on each bread slice.

  3. Add cheese, avocado slices, and sauerkraut or pickles to the slices.

  4. Assemble the sandwich and toast in a griddle pan until crispy and golden brown around the edges.

Tips

  1. If you don't like sauerkraut, swap it for pickles.
