Vegan Avocado Toast with Lentils and Basil

Ingredients

  • 2 slices sourdough bread
  • 1/2 avocado, sliced or mashed
  • 1 tomato, sliced
  • 5 basil leaves, sliced
  • 1/3 cup roasted beans or lentils
  • Few dashes hot sauce

Optional seasonings

  • Salt and pepper to taste
  • Everything but the bagel seasoning (optional)

Preparation

  1. Toast the sourdough bread slices until golden

  2. Layer the avocado on the toast

  3. Add the sliced tomatoes

  4. Sprinkle the roasted beans or lentils

  5. Top with basil leaves and hot sauce

Seasoning options

  1. Season with salt and pepper to taste

  2. Alternatively, use everything but the bagel seasoning
