Crispy Baked Zucchini Chips

Ingredients

  • 1 medium zucchini, sliced
  • 1/4 cup plant milk
  • 1/4 cup panko breadcrumbs
  • 1/4 cup nutritional yeast
  • 1/4 tsp onion
  • 1/4 tsp garlic
  • 1/4 tsp dill
  • 1/4 tsp parsley
  • 1/8 tsp black pepper
  • 1/8 tsp salt

Preparation

  1. Preheat the oven to 425°F

  2. Mix the first eight ingredients in a medium bowl

  3. Place plant milk in a shallow bowl

  4. Dip the zucchini slices into the milk, then into the bread crumb mixture, coating each side

  5. Place coated slices on a baking sheet covered in foil

  6. Bake for 30 minutes, flipping slices over halfway, until they're golden and crispy

  7. Enjoy
