Baked Sweet Potato Bowl with Salad

Ingredients

  • 1-2 sweet potatoes (8-900g)
  • 1/3 cup olive oil
  • 1 clove garlic (optional)
  • 1/2 tablespoon chili (optional)
  • 1 tablespoon thyme and rosemary
  • 1 tablespoon maple syrup
  • salt and pepper
  • spinach
  • avocado
  • hummus
  • couscous
  • sesame seeds

Preparation

  1. Preheat the oven to 220C (425F)

  2. Wash the sweet potatoes thoroughly

  3. Cut in thin long slices with skin

  4. Mix oil, garlic, chili, thyme, rosemary, maple syrup, salt and pepper well together

  5. Add on top of the potatoes and mix well

  6. Place on a baking tray and bake for 15-20 minutes, then flip and bake for 15-20 minutes more

  7. Serve with spinach, avocado slices, hummus, couscous and drizzle with sesame seeds
