Smoky Oven Baked Potatoes

Ingredients

  • 1 large or 2 medium white potatoes
  • smoked paprika
  • nutritional yeast
  • sea salt
  • olive oil (optional)

Preparation

  1. Preheat the oven to 200°C/180°C fan/400°F/gas mark.

  2. Line a baking tray with non-stick baking parchment.

  3. Wash and scrub the potatoes, then slice them into chunky bite-sized pieces or wedges.

  4. Add the potatoes to a mixing bowl, drizzle with a little olive oil if desired, then sprinkle with some smoked paprika, about 1 tablespoon nutritional yeast, and season with some sea salt.

  5. Stir the potatoes until they are fully coated in the seasonings.

  6. Transfer the seasoned potatoes to the lined baking tray, then bake in the oven for 30 minutes, turning over halfway, until golden and crispy on the outside.

Tips

  1. The potatoes are delicious dunked in tomato ketchup, hummus, or guacamole. They can be served with bean salad and hummus.
