Spicy Roasted Potato Wedges with Wild Garlic Guacamole
Ingredients
Potatoes
- 1kg charlotte potatoes, cut into wedges
- 2 tsp smoked paprika
- 1 tsp garlic powder
- 1 tsp chilli powder
- 5-6 garlic cloves
- olive oil, generous drizzle
- salt and pepper to taste
Guacamole
- 1 ripe avocado
- 1 spring onion, finely chopped
- juice of 1/2 lime
- small handful of wild garlic, finely chopped
- salt and pepper to taste
Preparation
Turn the oven on at 200 degrees Celsius.
Add the potato wedges to a large baking tray, add all the spices and seasonings and a generous drizzle of olive oil, then toss the potatoes to coat them evenly and add the garlic cloves with skin on.
Roast in the oven for 25-30 minutes until the potatoes are cooked and slightly crispy on the edges.
Mash the avocado with a fork and mix in the other guacamole ingredients.
Serve the potato wedges with the guacamole and squeeze out the pulp from the roasted garlic cloves to enjoy with them.
