Spicy Roasted Potato Wedges with Wild Garlic Guacamole

Ingredients

Potatoes

  • 1kg charlotte potatoes, cut into wedges
  • 2 tsp smoked paprika
  • 1 tsp garlic powder
  • 1 tsp chilli powder
  • 5-6 garlic cloves
  • olive oil, generous drizzle
  • salt and pepper to taste

Guacamole

  • 1 ripe avocado
  • 1 spring onion, finely chopped
  • juice of 1/2 lime
  • small handful of wild garlic, finely chopped
  • salt and pepper to taste

Preparation

  1. Turn the oven on at 200 degrees Celsius.

  2. Add the potato wedges to a large baking tray, add all the spices and seasonings and a generous drizzle of olive oil, then toss the potatoes to coat them evenly and add the garlic cloves with skin on.

  3. Roast in the oven for 25-30 minutes until the potatoes are cooked and slightly crispy on the edges.

  4. Mash the avocado with a fork and mix in the other guacamole ingredients.

  5. Serve the potato wedges with the guacamole and squeeze out the pulp from the roasted garlic cloves to enjoy with them.
