Salt and Vinegar Fries with Vegan Ranch

Ingredients

Fries

  • 2 potatoes
  • heavy pinch salt
  • pepper to taste
  • 3 tbsp vinegar
  • 1 tbsp oil

Ranch

  • 1/2 cup thick vegan or Greek yogurt
  • 2 tbsp olive oil
  • 2 garlic cloves
  • 2 tbsp vinegar or lemon juice
  • heavy pinch salt
  • pepper to taste
  • 2 tbsp fresh chives
  • 1/4 cup fresh parsley
  • 1/4 cup fresh dill

Preparation

  1. Preheat oven to 425 degrees.

  2. Toss fries in oil, salt, vinegar and pepper.

  3. Roast for 30 minutes flipping once halfway through.

  4. Add all ranch ingredients to a blender and blend until smooth.

  5. Let fries cool and then dip in ranch.

Tips

  1. If you want a stronger vinegar flavor drizzle more vinegar on the fries after they are done cooking.
