Zucchini Banana Chocolate Chip Muffin Bites
Ingredients
- 3/4 cup oats ground into flour
- 3/4 cup almond flour
- cinnamon to taste
- 1/2 tsp baking soda
- 1/4 tsp salt
- 2 flax eggs
- 2 ripe bananas
- 1 zucchini, shredded, with as much juice squeezed out as you can squeeze
- 1/4 cup peanut butter
- 1/4 cup maple syrup
- vegan chocolate chips (didn’t measure these)
Preparation
Mix together dry ingredients in a food processor.
Incorporate the wet ingredients until you have a batter.
If mixing everything in a processor, wait to add the zucchini and chocolate chips until the end, and add them by hand so that their texture comes through in the muffins.
Add the batter to a greased muffin tin.
Bake at 350 degrees for around 25 minutes.
