Zucchini Banana Chocolate Chip Muffin Bites

Ingredients

  • 3/4 cup oats ground into flour - 3/4 cup almond flour - cinnamon to taste - 1/2 tsp baking soda - 1/4 tsp salt - 2 flax eggs - 2 RIPE bananas (very important!) - 1 zucchini
  • shredded
  • with as much juice squeezed out as you can squeeze - 1/4 cup peanut butter - 1/4 cup maple syrup - vegan chocolate chips (didn’t measure these obv)

Preparation

  1. Mix together dry ingredients in a food processor, then incorporate the wet ingredients until you have a batter. If you’re mixing everything in a processor, wait to add the zucchini and chocolate chips until the end, and add them by hand so that their texture comes through in the muffins. Add them to your greased muffin tin, and bake at 350 for around 25 minutes

  2. Best thing about this recipe (and most dessert recipes) is you can adapt it to fit your preferences! Swap the chips for walnuts...add more or less sweetener based on your tastes...pb not your jam? try it with your favorite nut butter....add in some extra flax seed or chia seeds...use all oat flour if needed...the list goes on! Of course when you start messing with flours the texture will change a bit, but have fun and you’ll (most likely) end up with a delicious breakfast/midnight snack/dessert/dinner
