Roasted Eggplant with Peanut Butter Glaze

Ingredients

  • 1 eggplant
  • 1 tsp miso paste
  • 1.5 tsp tamari
  • 1.5 tsp maple syrup
  • 1 tsp peanut butter
  • 1 tsp water

Preparation

  1. Pre-heat your oven to 200C

  2. Slice the eggplant in half and optionally char the flesh side in a griddle pan

  3. Slice crisscross lines across the flesh to help flavors penetrate

  4. To make the glaze, add miso paste, tamari, maple syrup, peanut butter, and water to a small mixing bowl and whisk until smooth

  5. Place the eggplant halves onto a baking tray, evenly cover with the glaze, and bake for 25 minutes
