Spicy BBQ Lentil Sweet Potatoes

Ingredients

  • 2 sweet potatoes
  • 1 cup lentils
  • 3 cups vegetable broth
  • 1/2 diced onion
  • olive oil
  • 1 tbsp tomato paste
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 1/4 cup hot sauce
  • 1/4 cup BBQ sauce
  • guacamole
  • jalapeños
  • cilantro

Preparation

  1. Preheat oven to 425F

  2. Bake 2 sweet potatoes for 50-60 minutes

  3. Cook 1 cup of lentils in 3 cups vegetable broth according to package instructions until soft but not mushy, about 15 minutes

  4. Heat a skillet over medium heat

  5. Sauté 1/2 diced onion for 5 minutes in a little olive oil

  6. Reduce heat to low medium and add cooked lentils

  7. Add 1 tbsp tomato paste, 1 tsp garlic powder, 1 tsp paprika, 1/4 cup hot sauce, and 1/4 cup BBQ sauce

  8. Mix everything together and cook for 3-4 minutes

  9. Optionally sprinkle a little salt on top

  10. Serve with guacamole, jalapeños, and cilantro
