20 Minute Green Goddess Pesto Pasta
Ingredients
- 2 portions of whole wheat pasta
- 30g spinach
- 50g broccoli
- 50g edamame beans
- 2 cloves garlic
- 1/2 vegetable stock
- 3 tablespoons boiling water
- 1/4 teaspoon of sea salt
- 1/4 teaspoon oregano/mixed herbs
- 9 tablespoons oat milk
- 1 heaped tablespoon Sacla UK Vegan Basil Pesto
- 5 basil leaves
- 1 teaspoon Green Superfood Powder
- 1 teaspoon fresh lemon juice
- Black pepper
- Chilli flakes (optional)
- Lemon drizzle (optional)
Preparation
Put two portions of pasta on to cook following the packet instructions, and simmer for 15 minutes.
Place the spinach, broccoli and edamame beans into a colander or sieve and sit that on the pasta pot covered with a lid to steam the vegetables using the same time and water.
Meanwhile, place the garlic, stock, boiling water, sea salt and oregano into a blender and blitz for a few minutes.
Next, add the oat milk, Sacla UK vegan green pesto, fresh basil leaves, green superfood powder and lemon juice and blitz the mix until it is nice and smooth for approximately 5 minutes.
Just before the pasta finishes cooking, add the steamed vegetables to the blender and blitz again until nice and smooth.
Drain and serve the pasta, pour over the green goddess sauce and serve, sprinkling over some black pepper, chilli flakes if desired, and extra lemon juice if desired.
