20 Minute Green Goddess Pesto Pasta

Ingredients

  • 30g spinach ⠀
  • 50g broccoli ⠀
  • 2 cloves garlic ⠀
  • 1/2 vegetable stock ⠀
  • 3 tablespoons boiling water⠀
  • 1/4 teaspoon of sea salt⠀
  • 1/4 teaspoon oregano/mixed herbs⠀
  • 9 tablespoons oat milk ⠀
  • 1 heaped tablespoon @sacla_uk vegan basil pesto⠀
  • 5 basil leaves ⠀
  • 1 teaspoon fresh lemon juice ⠀
  • black pepper ⠀
  • chilli flakes (optional)⠀
  • lemon drizzle (optional)⠀

Preparation

  1. Put two portions of pasta on to cook following the packet instructions, and simmer for 15 mins

  2. Place the spinach, broccoli and edamame beans into a colander/sieve and sit that on the pasta pot covered with a lid

  3. This way you cook the pasta and steam the veg using the same time and water

  4. Meanwhile, place the garlic, stock, boiling water, sea salt and oregano into a blender and blitz for a few minutes

  5. Next, add the oat milk, @sacla_uk vegan green pesto, fresh basil leaves, green superfood powder and lemon juice

  6. Blitz the mix until it's nice and smooth (approx

  8. Just before your pasta finishes cooking, add the steamed vegetables to the blender (broccoli, spinach and edamame beans)

  9. Blitz again until nice 'n' smooooth

  10. Drain and serve your pasta, pour over your green goddess sauce and voila! serve and sprinkle over some black pepper, chilli flakes (optional) and extra lemon juice (optional)
