Creamy Sun-Dried Tomato and Roasted Pepper Pasta

Ingredients

  • 1 cup sun-dried tomatoes (marinated, drained)
  • 1/4 cup kalamata olives
  • 1/2 cup roasted red peppers (drained)
  • 3/4 cup to 1 cup oat milk (can sub another plant based milk)
  • 1/4 tsp garlic powder
  • Squeeze of lemon juice
  • Dash of salt and pepper to taste
  • 2 tbsp olive oil (or sub more milk)

Preparation

  1. Blend the ingredients in a food processor, scraping down sides as needed.

  2. Cook penne pasta according to package instructions.

  3. Sauté zucchini and asparagus in a bit of oil until tender.

  4. Toss the cooked pasta and vegetables with the sauce and serve.
