Creamy Sun-Dried Tomato and Roasted Pepper Pasta
Ingredients
- 1 cup sun-dried tomatoes (marinated, drained)
- 1/4 cup kalamata olives
- 1/2 cup roasted red peppers (drained)
- 3/4 cup to 1 cup oat milk (can sub another plant based milk)
- 1/4 tsp garlic powder
- Squeeze of lemon juice
- Dash of salt and pepper to taste
- 2 tbsp olive oil (or sub more milk)
Preparation
Blend the ingredients in a food processor, scraping down sides as needed.
Cook penne pasta according to package instructions.
Sauté zucchini and asparagus in a bit of oil until tender.
Toss the cooked pasta and vegetables with the sauce and serve.
