Creamy Sun-Dried Tomato Roasted Pepper Sauce
Ingredients
- 1 cup sun-dried tomatoes (marinated, drained)
- 1/4 cup kalamata olives
- 1/2 cup roasted red peppers (drained)
- 3/4 cup to 1 cup oat milk (can substitute another plant-based milk)
- 1/4 tsp garlic powder
- Squeeze of lemon juice
- Dash of salt and pepper to taste
- 2 tbsp olive oil (or substitute more milk)
Preparation
Blend the sun-dried tomatoes, kalamata olives, roasted red peppers, oat milk, garlic powder, lemon juice, salt, pepper, and olive oil in a food processor until smooth, scraping down the sides as needed
Serving
Serve with cooked penne pasta, zucchini, and asparagus
