Creamy Vegan Mac and Cheese
Ingredients
- 16 oz. Pasta
- 2 Cups Sweet Potatoes
- 1/2 Cup Carrots
- 1/2 Cup Cauliflower
- 1 Tbsp Lemon Juice
- 2 Tbsp Nutritional Yeast
- 1/4 Cup Cashews, soaked
- 1 Cup Plant Milk
- 1.5 Tsp Garlic Powder
- 1.5 Tsp Onion Powder
- 1.5 Tsp Paprika
- Salt/Pepper to Taste
- Cilantro to Top (optional)
Preparation
Cook pasta according to package in a large pot.
Cube and steam sweet potato, carrot and cauliflower until very tender, about 10 minutes.
Add to a blender along with the rest of the ingredients, and blend until smooth and creamy.
Once pasta is done, drain and return to pot. Pour in cheese mixture and swirl through pasta.
Serve with more paprika, pepper and nutritional yeast and maybe some cilantro and enjoy.
