Creamy Vegan Macaroni and Cheese

Ingredients

  • 1 cup macaroni pasta
  • 1 cup cashews
  • 1 carrot
  • 1 potato
  • 1/4 cup nutritional yeast
  • 2 tablespoons lemon juice
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon turmeric
  • 1/4 teaspoon paprika
  • salt and pepper to taste

Preparation

  1. Cook macaroni pasta in boiling water until al dente, then drain

  2. Soak cashews in hot water for 15 minutes

  3. Peel and dice carrot and potato, then boil until tender

  4. Drain the soaked cashews and the cooked carrot and potato

  5. Blend all ingredients except the pasta until smooth, adding water as needed

  6. Pour the sauce over the cooked pasta and stir to combine
