Creamiest Vegan Mac and Cheese
Ingredients
- 1/2 pound of dried pasta of choice
- heaping 1/2 cup raw cashews soaked overnight
- 1 large carrot, peeled and steamed to soften
- 1/3 cup nutritional yeast
- 1/2 cup veggie broth
- 1 tablespoon of vegan butter, softened
- 1 tsp salt
- 1/4 tsp smoked paprika
- 1/2 tsp of garlic powder
- 1/4 tsp onion powder
Preparation
Cook the pasta according to package directions until al dente.
In a blender, combine the soaked cashews, steamed carrot, nutritional yeast, veggie broth, salt, smoked paprika, garlic powder, and onion powder; blend until smooth and creamy.
In a saucepan over medium heat, melt the vegan butter and stir in the blended sauce mixture; cook until heated through and well combined.
Add the cooked pasta to the sauce and toss to coat evenly; serve immediately.
