Creamiest Vegan Mac and Cheese

Ingredients

  • 1/2 pound of dried pasta of choice
  • heaping 1/2 cup raw cashews soaked overnight
  • 1 large carrot, peeled and steamed to soften
  • 1/3 cup nutritional yeast
  • 1/2 cup veggie broth
  • 1 tablespoon of vegan butter, softened
  • 1 tsp salt
  • 1/4 tsp smoked paprika
  • 1/2 tsp of garlic powder
  • 1/4 tsp onion powder

Preparation

  1. Cook the pasta according to package directions until al dente.

  2. In a blender, combine the soaked cashews, steamed carrot, nutritional yeast, veggie broth, salt, smoked paprika, garlic powder, and onion powder; blend until smooth and creamy.

  3. In a saucepan over medium heat, melt the vegan butter and stir in the blended sauce mixture; cook until heated through and well combined.

  4. Add the cooked pasta to the sauce and toss to coat evenly; serve immediately.
