Creamiest Vegan Mac and Cheese

Ingredients

  • 1/2 pound of dried pasta of choice
  • heaping 1/2 cup raw cashews soaked overnight
  • 1 large carrot, peeled and steamed to soften
  • 1/3 cup nutritional yeast
  • 1/2 cup veggie broth
  • 1 tablespoon of vegan butter, softened
  • 1 tsp salt
  • 1/4 tsp smoked paprika
  • 1/2 tsp of garlic powder
  • 1/4 tsp onion powder

Preparation

  1. Cook the pasta according to package instructions until al dente

  2. In a blender, combine the soaked cashews, steamed carrot, nutritional yeast, veggie broth, vegan butter, salt, smoked paprika, garlic powder, and onion powder; blend until smooth to make the sauce

  3. Heat the sauce in a saucepan over medium heat until warmed through, stirring occasionally

  4. Drain the cooked pasta and mix it with the sauce until well coated

  5. Serve immediately, optionally garnished with additional smoked paprika or herbs
