Bbq Baked Seitan

Ingredients

  • 1 cup vital wheat gluten
  • 2 tbsp nutritional yeast
  • 1 tsp garlic powder
  • 2 tsp smoked paprika
  • 2 tsp onion powder
  • 1 cup veggie broth
  • 1 tbsp soy sauce
  • 1/3 cup bbq sauce of choice

Preparation

  1. Combine all dry ingredients

  2. Add in the wet ingredients except BBQ sauce and give a gentle stir to combine

  3. A dough should begin to form

  4. With your hands gently knees into a dough ball (do not over kneed

  5. This step should just take less than a minute to do)

  6. Transfer dough to a lined baking sheet

  7. Flatten and spread dough out until it is inch thick

  8. Then place in a preheated oven at 350F for 25 minutes

  9. Remove from oven and brush both sides with your favorite BBQ sauce

  10. At this stage you can either grill or rebake your seitan

  11. For equipment purposes I went with baking this again for another 10 mins

  12. At the very end of baking to help char ends a little I broiled it on high for 2 minutes

  13. Once removed from the oven

  14. Allow to cook slightly before cutting it into strips as desired

  15. BBQ sauce: 1/2 cup tomato paste, 2 tbsp brown sugar, 2 tbsp blackstrap molasses, 1/2 tsp salt, 1 tbsp apple cider vinegar, 3/4 cup vegetable broth, 2 tbsp smoked paprika (if you have some liquid smoke definitely add a splash for extra smoky flavor), 2 tsp garlic powder, 1 tsp onion powder

  16. Add ingredients except salt and apple cider vinegar to a sauce pan and bring to a low simmer

  17. Cover with a lid and cook on low heat for 10 minutes

  18. Allow sauce to cool completely then add in salt and apple cider vinegar and stir well

  19. Pour into a container and store in the fridge
