Vegan Lentil Taco Filling
Ingredients
- 1/2 bag soaked pardina lentils
- Veggie broth
- Garlic powder
- Onion powder
- Chili lime seasoning
- Chili seasoning
- Smoked paprika
- Liquid coconut aminos
- Liquid smoke
Preparation
Simmer lentils in a pot with veggie broth just covering them until tender, about 20-30 minutes.
Drain the lentils.
Place the lentils in a food processor or blender and pulse until roughly chopped but with some whole pieces remaining.
Transfer the lentil mixture to a hot pan with a little oil and more veggie broth.
Cook on the pan, rehydrating with veggie broth as needed to keep moist.
Add seasonings, using a couple dashes of each (garlic powder, onion powder, chili lime seasoning, chili seasoning, smoked paprika, liquid coconut aminos, liquid smoke), along with salt and pepper, and adjust to taste.
