Vegan Lentil Taco Filling

Ingredients

  • 1/2 bag soaked pardina lentils
  • Veggie broth
  • Garlic powder
  • Onion powder
  • Chili lime seasoning
  • Chili seasoning
  • Smoked paprika
  • Liquid coconut aminos
  • Liquid smoke

Preparation

  1. Simmer lentils in a pot with veggie broth just covering them until tender, about 20-30 minutes.

  2. Drain the lentils.

  3. Place the lentils in a food processor or blender and pulse until roughly chopped but with some whole pieces remaining.

  4. Transfer the lentil mixture to a hot pan with a little oil and more veggie broth.

  5. Cook on the pan, rehydrating with veggie broth as needed to keep moist.

  6. Add seasonings, using a couple dashes of each (garlic powder, onion powder, chili lime seasoning, chili seasoning, smoked paprika, liquid coconut aminos, liquid smoke), along with salt and pepper, and adjust to taste.
