Peanut Satay Stir Fried Rice

Ingredients

  • 2 tbsp peanut butter
  • dash of soy sauce
  • 1 garlic clove, minced
  • 1-2 tsp maple syrup
  • pinch of onion powder
  • optional but good) 1 tsp sesame oil

Preparation

  1. Mix all the ingredients, adding some water if necessary then heat on the hob for about 5 mins, until combined

  2. Brown rice (boiled n drained or leftover from the fridge)

  3. Spinach

  4. Broccoli, boiled

  5. Sweetcorn

  6. Sauté the spinach, add in the rice, broccoli, sweetcorn and satay sauce

  7. Heat until all combined and warmed through
