20 Min Peanut Stir-Fry

Ingredients

  • 1/3 block firm tofu
  • white mushrooms
  • 1 zucchini & broccolini pieces
  • garlic powder
  • a splash of sesame oil
  • noooods
  • 1 tbsp peanut butter
  • 2 tbsp soy sauce
  • garlic powder
  • ground ginger
  • splash of vinegar
  • sriracha & water to thin

Preparation

  1. Press 1/3 block firm tofu to release excess moisture, then cut into cubes. to an oiled pan over med heat, add the cubes & fry on each side until browned (5-8 mins in total)

  2. While the tofu is frying, prep & cut your fav veg. I sliced a handful of white mushrooms, 1 zucchini & broccolini pieces

  3. Once the tofu is crispy, set aside in a bowl. add veg to the same pan, seasoning with s+p & garlic powder + a splash of sesame oil

  4. While the veg is cooking, prepare noooods. I poured boiling water over a FULL square of top ramen (yes FULL, I know 1 bag = 2 servings) & set aside for ~5 mins to soften

  5. Peanut sauce: whisk together 1 tbsp peanut butter, 2 tbsp soy sauce, garlic powder, ground ginger, splash of vinegar, sriracha & water to thin

  6. Once veg is cooked, add the tofu, noodles & peanut sauce, stirring to combine
