Sweet Thai Basil Stir Fry
Ingredients
- 175g firm tofu
- 3 cloves of garlic
- 4 birds eye chillis
- 2 long red chillies
- 4 tbs oil
- 3 tbs vegetable stock or water
- 0.5 tsp white sugar
- 1 tbs light soy sauce
- 0.5 tbs dark soy sauce
- handful of Thai basil leaves
- 1 tbs soy sauce
- 1 tsp potato or corn starch
Preparation
Prepare tofu by crumbling it into a fine mince with your hands. This might take a few minutes, be patient the end result will be better
Mix marinade ingredients together then pour over tofu and mix well - let sit for min 20 mins.
Mash garlic and chillies in a mortar and pestle. If you don't have one use a blender. If not a blender, use a garlic crusher, failing that and as a last resort finely chop with a knife. Set aside.
In a hot wok or pot add oil and add tofu and cook on medium head for 5-7 minutes, stirring vigorously to avoid burning. Your aim here is to draw all the water out of the tofu, while giving it almost a crispy exterior
Once you have achieved this, shift tofu to the side of the wok and and 1 more tbs oil and then throw in garlic and chilli paste and stiry fry for 1 -2 mins
Finally add soy sauces and stock and stir fry for a final 2 mins. Turn off heat, add Thai basil, mix well. Serve with white rice
