Authentic Holy Basil Stir Fry

Ingredients

  • 4-8 birdseye chillies depending on heat tolerance⁣
  • 6 cloves garlic⁣
  • pinch of salt⁣
  • 1 large red chilli⁣
  • 300g firm tofu, crumbled into mince (use your hands!)⁣
  • 5 tbs veg oil⁣
  • 1.5 tbs light soy sauce⁣

Preparation

  1. Pound both type of chillies, salt and garlic into a paste using mortar and pestle, or blend using a blender (you might have to add a dash of water if blending).⁣

  2. Get a wok or pan hot, add oil. Stir fry crumbled tofu on med-high heat for 5 mins stirring very vigorously to avoid burning.⁣

  3. Push cooked tofu to one side, then add your paste and stir fry for 2 mins. Add soy sauces, sugar, stir everything together. Turn off heat, add basil leaves, mix well. Serve with rice and a frosty beer
