Spicy Thai Basil Tofu

Ingredients

  • 14oz firm tofu, pressed
  • 1 large shallot
  • 4 cloves garlic
  • 2 Thai chilies
  • 1 cup packed Thai basil leaves
  • oil for cooking
  • salt to taste

Sauce

  • 1/2 teaspoon dark soy sauce
  • 2 tablespoons soy sauce
  • 1/3 cup vegan fish sauce
  • 1 teaspoon sugar
  • 1 teaspoon cornstarch
  • 1/3 cup water

Preparation

  1. Mix the sauce ingredients in a mixing bowl until well-combined and set aside.

  2. In a heated non-stick pan, mash tofu into crumbles and cook until slightly dry.

  3. Add about 1 tablespoon of oil and continue to cook until tofu turns golden brown.

  4. Push tofu aside, add a little more oil, and sauté shallots until translucent.

  5. Continue to sauté garlic and chili for another 30-45 seconds.

  6. Bring all the mixture together and give it a quick stir.

  7. Add in the sauce and sugar and cook down a little.

  8. Add the Thai basil and toss everything until all incorporated.

  9. Turn off the heat and serve warm.
